Using hardened (62-64 HRC) high carbon steel, this S-Grind Gyuto Chef's knife, is finely ground and heat treated in-house. This results in a high-quality kitchen tool, that slices easily through a variety of ingredients. 


This blade features what is commonly known as an S-Grind—a deep hollow milled into the blade just above the edge, which creates an S shape when looking down the knife from the heel. This design allows air to get behind the food with every slice, eliminating the suction present on flat ground knives and making quick work of even the most hard-to-cut ingredients, such as onions, potatoes, and cucumbers.

Each knife is hand tuned to find its unique balance point just in front of the bolster, for optimal controllability. Its handle is crafted from figured dyed (black with a bit of red near the bolster!) and stabilized curly maple which is sanded to a low lustre and oiled for protection. The hand shaped bolster is made from carbon steel and oxidized to a deep black finish. The blade itself is hand-rubbed and acid etched for a dark protective finish. This produces a versatile knife that is both functional and attractive. 

Each knife includes a handmade leather case which, like all Nordquist products, is crafted in-house. The case is made from 6oz oil tanned leather sourced from S.B. Foot Tanning Company, the principal supplier of leather for Red Wing Shoes. An auburn leather lace is woven into the supple leather, securing the knife inside. This simple case is as functional as it is elegant, offering safe storage for your new knife—or perhaps your old one!


Like the entire Nordquist Designs line, this Gyuto knife is of truly heirloom quality. Handcrafted in the British Columbia’s Okanagan Valley from locally-sourced materials, these kitchen tools are made to last generations.
