The carbon steel heirloom Gyuto knife is handcrafted in Kelowna, British Columbia. The edge is finely ground and heat-treated in-house, creating a smooth glide when using. . The heirloom Gyuto provides ample clearance between your fingers and the cutting board. This blade features an S-Grind; A deep hollow milled into the blade just above the edge. The result is a profile that, when looking down the knife from the heel, is roughly an S shape. This shape greatly improves the release of softer wet foods because it allows air to get behind the food, eliminating the common suction on flat ground knives. Each knife is hand-tuned to find its unique balance point just ahead of the bolster.
All knives come with a Torrefied Maple Edge Guard. Made using off-cuts from a Canadian manufacturer, the handmade Torrefied Maple Edge Guard protects the knife's edge from dulling when put into a drawer with other utensils. Unlike a traditional saya or leather sheath, the edge guard protects the edge without potentially trapping moisture that could cause rust. Rare earth magnets embedded in the guard ensure it stays attached.
The knife handle can crafted from curly maple, wenge or other materials upon request (Price will vary for Limited Edition Knives). Wenge is an exotic hardwood with a straight corse grain that offers a grippy texture and when oiled is very durable. Curly Maple is a figured Canadian hardwood. The grain is 'curled' creating a 3D effect in the grain. As it is a natural hardwood, each handle will have a unique grain pattern. The handle is removable using the gold plated hex key that comes with each order. All handles are removable allowing for easy sharpening, cleaning and durability.
