Amboyna Live Edge S-Grind Gyuto

This s-grind gyuto is crafted from 52100 high carbon steel and hardened to 62 Rockwell C. 

Its octagonal wa style handle is crafted from stabilized amboyna burl. This handle has the 'live edge' of the burl exposed on the end of the handle. The edge is stable, but it is more delicate than a traditional handle butt. The insert is hand textured ebony. The blade has been hand rubbed to a satin finish.

Each knife includes a handmade leather wrap which, like all Nordquist products, is crafted in-house. The case is made from 6oz oil tanned leather sourced from S.B. Foot Tanning Company, the principal supplier of leather for Red Wing Shoes. An auburn leather lace is woven into the supple leather, securing the knife inside. This simple case is as functional as it is elegant, offering safe storage for your new knife—or perhaps your old one!
